茶餐廳風味~戚風紙杯蛋糕 [Eng/Chn Sub]-Hongkong Cafe Style Cupcake

做法:
1.預備材料:
雞蛋 3隻
花奶4湯匙
低筋麵粉 60g
白糖5Og

2.用手將蛋黃和蛋白分開,蛋白中不能有一點蛋黃或水
3.拌勻蛋黃,加入一茶匙白糖拌勻
4.加入4湯匙花奶拌勻
5.最後加入60 gram低筋麵粉,用刮刀拌勻
6.用攪拌機高速發開蛋白
7.分三次加入白糖,每次一湯匙
8.高速打拌蛋白,至蛋白變硬及起紋
9.將蛋白漿分三次拌入蛋黃漿
10.用刮刀拌勻蛋黃漿及蛋白漿,刮刀在中間切入從底部覆向另一邊,用覆蓋的方法拌勻蛋漿
11.將蛋漿盤拍拍枱面以去除漿里較大的氣泡
12.倒入紙模具
13.預熱焗爐350F/180C
14. 焗30分鐘

Recipe:
1.ingredients: 3 eggs, 4tbs evaporated milk, 50g sugar, 60g cake flour
2. Use your hand to separate the egg yolk from the white, make sure there is no yolk left in the white
3. Use a spatula to blend the yolk n blend in 1tsp sugar
4. add 4tbs evaporated milk n blend
5. Blend in 60g cake flour till smooth
6. Beat the egg white at high speed
7. Add 3 tbs sugar one at a time
8. Beat till the white firms up
9. Add the white paste to the yolk paste
10. Use a spatula to cut in the middle and blend the paste from the bottom to the top
11. Shake away the bigger bubbles in the paste
12. Pour into paper cups
13. Preheat oven 350F/180C
14. Bake for 30 min
